Linguine with tomato, anchovy and olive sauce

Linguine with tomato, anchovy and olive sauce is so simple to prepare but really flavoursome. Anchovies are a good source of iron.

Ingredients
1 teaspoon olive oil
2 onions, finely chopped
1 garlic clove
8 anchovies, tinned, drained and rinsed of salt
8 black olives, pitted and finely chopped
100g sun-blush tomatoes, drained and chopped
500g dried linguine pasta
Black pepper

  1. Heat the oil in a pan, add the onions and garlic and cook over a low heat for 1 minute. Add the anchovies, olives and tomatoes.
  2. Cook the pasta according to manufacturers instructions. Keep 65ml of the water when you drain the pasta.
  3. Add the drained pasta and water to the anchovy mixture. Toss well together.
  4. Add pepper to taste. Serve.
