Linguine with tomato, anchovy and olive sauce is so simple to prepare but really flavoursome. Anchovies are a good source of iron.

Ingredients
1 tsp olive oil
2 onions, finely chopped
1 garlic clove
8 anchovies, tinned, drained and rinsed of salt
8 black olives, pitted and finely chopped
100g sun-blush tomatoes, drained and chopped
500g dried linguine pasta
Black pepper
- Heat the oil in a pan, add the onions and garlic and cook over a low heat for 1 minute. Add the anchovies, olives and tomatoes.
- Cook the pasta according to manufacturer's instructions. Keep 65ml of the water when you drain the pasta.
- Add the drained pasta and water to the anchovy mixture. Toss well together.
- Add pepper to taste. Serve.
