Nutty fried rice

Healthy main meal alternative

Nutty fried rice is delicious; it has a chewy texture. Peanuts are a very valuable source of protein for vegetarians, they also provide fibre.

Preparation and cooking time: 40 minutes
Serves: 4

Ingredients
1 medium onion diced finely
1 tablespoon of oil
2 cloves garlic, pressed
½ red pepper, sliced
½ yellow pepper, sliced
60g raisins
½ tin of sweetcorn
2 pints boiling vegetable stock
350g brown rice
60g salted peanuts
Freshly ground black pepper

  1. Cook the rice in the stock as the instructions on the packet state.
  2. Heat the oil and fry the onion and garlic for 2 minutes on a medium heat.
  3. Add all the other ingredients (including the rice) to the onion and garlic and fry for 5 minutes on a medium heat.
  4. Season with the pepper. Serve.
