Nutty fried rice

Healthy main meal alternative

Nutty fried rice is delicious; it has a chewy texture. Peanuts are a very valuable source of protein for vegetarians, they also provide fiber.

Serves: 4

Ingredients
1 medium onion diced finely
1 tbs of oil
2 cloves garlic, pressed
½ red pepper, sliced
½ yellow pepper, sliced
2oz raisins
½ can of sweet corn
2 pints boiling vegetable stock
1½ cups brown rice
2oz salted peanuts
Freshly ground black pepper

  • Cook the rice in the stock as stated on the cooking instructions.
  • Heat the oil and fry the onion and garlic for two minutes on a medium heat.
  • Add all the other ingredients (including the rice) to the onion and garlic and fry for five minutes on a medium heat
  • Season with the pepper. Serve.
