Healthy main meal casserole
Comfort food, but healthy! Low fat sausages make sausage casserole a good choice when you need a pick-me-up but without the calories. Serve with mashed potato.

Preparation and cooking time: 40 minutes
Serves: 4
Sausage casserole ingredients
8 low fat sausages
1 tsp oil
1 onion, sliced
100g frozen peas
1 can (15½oz) red kidney beans
1 (17.7oz) jar passata (if you cannot find passata, simply drain and sieve the same quantity of canned tomatoes)
2 tbs wholegrain mustard
2 tbs tomato ketchup
Freshly ground black pepper
- Broil the sausages on high for 15 minutes, continuously turning until browned.
- Heat the oil and fry the onion until golden brown, add all the other ingredients and the sausages and simmer, covered for 40 minutes.
- Serve with mashed potato. Serve.
