    It's goodbye from 2009 and it's goodbye from me x

    Hi whoever you are. I’m sorry but I think this will be my last post for some time.

    But  onto the important issue – dinner! Tonight will be a homemade baked rainbow trout quiche and tomorrow an assorted smoked fish (salmon, mackerel and trout) stir fry. The stir fry is made with lots of colours and crunch with a lovely greeny depth from some Chinese leaves! YUM!!!!

    I’m feeling really chuffed as I have managed to organise a lot of the food for crimbo and it’s stored up nice and snug in the freezer. I also managed to make biccies yesterday and make a cake by 7 a.m. this morning! How impressive is that!

    Now for the toodle pip bit…I just want to say a huge thank you for reading this and hope your future is full of lots of seriously fabulous food.

    Sleep deprivation cooking....zzzzzzzzzzzz

    And to more food… just for a change!

    Last night we had a lurrrvly meal (actually surprisingly nice given I was well tired – thanks to mine and the neighbour’s littley the night before!). It was salmon risotto with chantenay carrots and new season broccoli. The broc was kinda odd in that it tasted more like asparagus – how does that work??? No idea but was so yuuum!

    Hope, whatever it is, that your dinner (aka tea/ evening meal) rocks!Wink

    Xmas trees, candy canes and mulled stuff

    Hi - so been cooking up a storm lately. The highlight being a kiddy Xmas party at the weekend. We had no salt crisps (to the derision of all) and normal crisps, ham (made from a lovely gammon joint) and watercress/ smoked salmon and cream cheese and cheese & tom sandwiches for the grown ups. Cream cheese and cheese sandwiches for kiddies. Mince pies (although I forgot to put these out so been eating them ourselves! He he). I even made the mincemeat myself - with cranberries and orange - yum. A gingerbread tree tower with candy necklace tinsel. Vanilla snowman cup cakes and banana and honey (with candy cane decs) cup cakes. Mini breadsticks, sausage rolls and quiche - all the cliché food! And for drinkies it was a fab (adoooooore this) mulled apple juice. People were super kind about it. Red wine, OJ, tea, coffee etc. It was such fun. Why can't it be Xmas every day?????

    Confession time.....

    OK so ermmm... my confession..... I've forgotten the recipe again!!!! So sorry!!!!!!

     

    I can't be sure but I think it was....

    80g golden caster sugar (any caster sugar will do though)

    2 tbsp fruit spread (I used apple and pear) - you can get this from health food shops

    2 tbsp of golden syrup

    2 -3 eating apples - peeled, cored and grated

    350g oats.

     

    Slowly melt the sugar, fruit spread and golden syrup together in a pan on the hob.

    Take off the hob and add the remaining ingredients.

    Mix.

    Divide into little balls and bake on a lined baking tray at 180 degrees C for 20ish mins.

     

    If the recipe looks too wet just add in some more oats or too dry then you could chuck in a bit more apple or fruit spread.

    You could also vary it a bit by adding in some mixed spice or cinnamon too if you wanted to. Or put in some dried fruit, nuts and seeds. Or maybe add to the mixture some roughly chopped fresh raspberries or blackberries. What the heck - go mental and enjoy!Tongue out

    Sundays on a Wednesday!

    Sorry I have been gone ages!!!

    But down to it and on to some meals for this week – we have salmon with new pots and asparagus (bit unoriginal but hey why mess with something so yum??) with mum’s allotment stewed apple and raspberries for pud – FAB!!!!, portabello mushie burgers with pumpkin (really not that popular – OK truth be told I was the only one who liked it) & home baked orange cake, home made ham soup with ‘Sundays’ & orange cake and some kind of pie (think the boyf needs one!) and something with Chicken. I have forgotten the flapjack recipe but will def get it written and up tom! Sos!!!
