    Hi Everyone,

    I went to Holland and Barrett on Monday and have been eagerly testing out the stuff I bought. First of all I got chromium tables and tablets with iron and vitamin C. Chromium because it's meant to help stabilise blood sugar levels and iron because I tend to get low haemoglobin. The vitamin C is just an extra just because it was 1/10 of the price of the iron only supplement and the both have the same amount of iron. I got a tub of coconut oil because it's been raved about and it seems to be good for literally everything. I've also been seeing coconut flour everywhere as I've been doing paleo research so I got a bag of that and thought I would start experimenting.

    I heard about coconut oil first when Miranda Kerr revealed it as her ' beauty secret' and she said she takes 2 tablespoons every day. I then heard of a girl who uses it to remove her make up, then saw that people were using it for cooking and the list goes on. First of all, if Miranda Kerr uses it, it must be good. I mean who wouldn't want to look like her? But even if it won't give me Victoria's Secret looks it seems to have lots of other benefits too. I have long suspected that I've got an under active thyroid but the doctors here refuse to test me for it because my symptoms aren't 'significant' enough. Coconut oil is meant to speed up your thyroid function thus increasing your metabolism. I also get dry skin in the winter and you can use it as a moisturiser and it should also hydrate your skin internally. Other uses include hair care, lip balm, digestive aid, treating sun burn and other minor skin conditions. Let's see how it goes but so far I have used it in cooking and it added a lovely flavour to my veggies, I used it on my skin and it was super soft the next day and I also put it in my tea (not sure if I was a fan of this one) and used it for dipping my 'bread in'. Might give hair treatment a go this weekend.



    Now to the recipes! I made 3 things, two of them using coconut flour and one just because I liked the look of it. They all turned out great and I will definitely be making these again.

    Mini Banana Breads (these were meant to be cookies but think I put too many wet ingredients)

    1 ripe banana mashed
    1 egg
    2 tbsp coconut flour
    50 ml of milk or non dairy substitute
    50 ml of pineapple juice
    1 tbsp of honey

    Mix all ingredients well and bake at 225'C for 15-20 minutes and let them cool. Would be delicious with some sugar free jam, the texture is scone like.

    Mini Cauliflower and Chorizo Bites

    1 cauliflower
    1/2 white onion
    40g of gluten free chorizo
    100g of low or zero fat cottage cheese
    1 egg
    1 clove of garlic
    herbs, salt and pepper

    Cook the cauliflower, process in a food processor with the cottage cheese, seasoning and egg. Cook the onions and chorizo until crispy and then fold into the mixture. I put the mixture into little muffin cases but a lot of it was left behind when I took them out so I think next time I will just bake the bites on grease proof paper just like the banana breads. Bake for 30-40 minutes until firm, let them cool a bit and serve with  tomato chilli dip. Sooo good!

    Rosemary Coconut Bread

    1/2 Avocado mashed
    2 Tbsp coconut flour
    1dl milk or non dairy substitute
    1 egg
    rosemary and sea salt

    Mix all ingredients and place on grease proof paper to bake at 225'C for about 20 minutes. Let them cool bit and serve with a bit of olive oil or coconut oil like I did. I melted the coconut oil, added a pinch or salt, pepper and herbs and a very small clove of garlic. These were divine, the texture is not really bread like but they taste delicious and certainly will get rid of that 'bread craving'. Good thing is they are gluten free and can be made dairy free too.
