I'm a huge fan of healthy eating but find that it's much harder to keep it up in the week when things get hectic. It's so easy to grab a sandwich and a bag of crisps when you're in a rush, but preparing a healthy lunch for 5/7 days that you can carry with you in your bag can be a little more difficult.
Anyone got any yummy, healthy recipes that are good for taking to work with you?

I find that a tub of dried fruit and nuts on my desk or some hummus and carrot sticks in the fridge at work are good, healthy go-tos

Thanks Rachel. I love hummus and carrot sticks and will definitely stock up on some dried fruit at the weekend to take to work with me. I'll have a little browse around the health store too to see what healthy options they have to offer.

I love hummus, I used to take oatcakes to work (those ones you get in little packets of about 6 oatcakes) and one of those mini pots of hummus you can get and have them for lunch. It was really quick and convenient and kept me full for ages.

Oatcakes are really growing on me now - I didn't used to like them. They've got some nice trail mixes in Holland & Barrett that I've been nibbling on at the moment -I think they're pretty healthy.
Finding a place that stocks healthy and tasty salads might help too. So that you look forward to getting the healthy option as much as the unhealthy one. Or making a big tub of salad at the start of the week so you can just dip into it when you are peckish
