Healthy Mexican Food

I love Mexican food but it can be quite calorific. Any suggestions on how to make it lighter?

Is Mexican pretty bad? I thought as long as you steered away from too much cheese that it wasn't that bad?

Mexican food is often quite fatty, heavy on the soured cream, cheese, red meat and avocadoes. They also use a lot of beans, peppers and tomatoes though and the salsas are usually tomato based. I really like fajitas - sliced chicken, peppers, tomatoes and spices in a wrap.

It's the frying that does it for Mexican food. Quesadillas, tacos etc all fried. I'd say just take the basics and try to cut out the frying wherever possible. Slow Roast pork salad etc!!

I love Mexican food - maybe try some of Thomasina Myers recipies, they are super fresh and light. Her restaurant in London is fantastic, focussing on Mexican street food.

I love Mexican food! A lot of Mexican food can be quite healthy - as the others have said it's just the frying and added extras like cheese and sour cream that can add on calories. I like making fajitas with mixed veg or with prawns (which have next to no fat) - just fry the veg in a really small amount of oil and add some seasoning. Instead of the sour cream and cheese, stick to salsa and low-fat guacamole to keep the calories down.

What about low-fat sour cream - that could cut some calories- or is that still pretty bad? I'd love some Mexican food now, might have to treat myself to it this weekend!

Can you get low fat sour cream? I haven't seen that before! That would be good.

You can, but I'm not a big fan - might be better to make your own with natural yogurt and some chives or cucumber.
