How many Vegetables is too many in a given dish? I always feel the need to ram loads in but is this necessary? Maybe a bit overly keen to reach my five a day?

If you like them then great! But don't give yourself tummy ache trying to ram too many in!

How many do you usually try to get in? I try to get about three in my main meal at night, or have a good chunky salad with some kind of meat.

I'm the same as you Carly_A. Minimum of three. I wouldn't think you can eat too many vegetables, as long as you don't get sick of them that is

I managed to get all five in one meal the other night - leeks, peppers, spring onions, broccoli and sweet potato - I was very impressed with myself!

2-3 in the main evening meal, 2-4 in a lunch which is mostly salad based at the moment and 1-3 at breakfast as I'm having more smoothies at the moment. Average of about 8 portions of fruit and veg per day, sometimes more but rarely less.

It's easy to fit different types of vegetables into a dish, but not necessarily a full portion of each. Sometimes it's better to reduce the fruit or veg at a meal and spread it over the day, the fibre can make your stomach bloated and uncomfortable, especially if you're eating later in the evening.

Oh is it the fibre content that causes bloating? I didn't know that. I love all fruit and veg (well, apart from grapefruit and pears) so I don't see it as a chore to fit it into meals. I made a vegetable curry the other day and it's satisfying throwing all manner or veg into it, knowing it's all good for you.

I really enjoy vegetable lasagne - usually get a good few of my 5 a day in that, and then have it with a side salad too.

I love veg dishes! I like to experiment and see what vegetables might go well with each other.  You can come across some fab new meals this way too!

I love veg dishes too. I'm not a vegetarian but I definitely could be. Vegetable curry is my favourite

Me too - I'm not sure I could be vegetarian, but I could quite easily eat most of my meals without meat.

My suggestion would be sweetcorn fritters (I am actually making these tonight!). you just mix flour, egg, sweetcorn and other ingredients to add flavour, such as chives, red chilli and corriander, then fry them like burgers.

They sound yum - adding chives sounds like a good idea too!

I probably eat way too much meat at the moment. My biggest problem with veg is that I don't like soft or watery veg, so I either have to have it roasted at a really high heat (which is difficult to maintain with large quantities), or I like it a bit on the raw side, which I always get my timings wrong with.

If anyone has any advice on roasting vegetables that would be helpful!

I've been making roast veg with rosemary recently - it's really good (unless you leave it in too long, which is exactly what I did the other night... charcoal veg is not so good).
