Anyone got any recipes for healthy banana bread? I love the stuff but can't justify sugar and butter at the moment.

I recently tried regular banana bread and LOVE IT! Can't believe I'd never tried it before. Will have to give the healthier version a go now.

Banana bread is great, and a relatively "good" treat as far as treats go. Have any other fruits been used to make bread?
I've never tried banana bread (or any other kind of fruit bread). Is it more like a bread or a cake?
Banana bread is cake, it's cake mixture rather than dough. I love it fresh, shop stuff isn't usually too nice so I rarely have it.
Most fruits don't tend to be used in typical cake mixtures, bananas are good because they mush easily and blend into the cake mixture, add sweetness and help retain moisture. You have to use bananas that are speckled dark brown/black. You can do pineapple or apple upside down cake which is good, but you leave the fruit in big chunks and they serve more as decoration.
Courgettes and carrots are good for cake baking too, the vegetables help keep the cake from drying out. Carrot and walnut cake is my absolute favourite :)
