I want to make stuffed portabello mushrooms for dinner, but I don't know what to stuff them with! Any suggestions/recipes?

I stuff mushrooms with cheese, tomato and mixed herbs. It works well.

This receipe looks tasty though http://www.howto-simplify.com/2010/08/portobello-mushrooms-stuffed-with-goat.html

You can stuff them with risotto, which is nice. You could also top them with grilled halloumi cheese and sweet chilli sauce (think this was a BBC Good Food recipe) which is lovely and also really simple!

I've had some with risotto and they were really good. Adding halloumi cheese and sweet chilli sauce sounds good - will have to give it a whirl!

Adding Sweet Chilli sauce, cheese, and tomatoes sounds good. Also for nutrition info, Portabello Mushrooms contains Calories, Carbohydrates and Proteins.

I think maybe the only thing that doesn't have calories in is possibly water?

I like the sound of this meal!

Stuffed portabello mushrooms with blue cheese (ie gorgonzola) and peppers is amazing, definitely worth a try! use fresh herbs like thyme, parsley and coriander too if you have them :)))

I never did get on with Haloumi, cheese should melt! At least in my head it should. I suppose it's useful that it doesn't, because you can use it for more things, but it reminds me of a solid mozarella / babybel and I'm not much keen on either.

I don't like babybel either but I love cold mozarella in a salad with basil and tomatoes mm
