I want to make stuffed portabello mushrooms for dinner, but I don't know what to stuff them with! Any suggestions/recipes?

I stuff mushrooms with cheese, tomato and mixed herbs. It works well.

You can stuff them with risotto, which is nice. You could also top them with grilled halloumi cheese and sweet chilli sauce (think this was a BBC Good Food recipe) which is lovely and also really simple!

I've had some with risotto and they were really good. Adding halloumi cheese and sweet chilli sauce sounds good - will have to give it a whirl!

I think maybe the only thing that doesn't have calories in is possibly water?

Stuffed portabello mushrooms with blue cheese (ie gorgonzola) and peppers is amazing, definitely worth a try! use fresh herbs like thyme, parsley and coriander too if you have them :)))
I never did get on with Haloumi, cheese should melt! At least in my head it should. I suppose it's useful that it doesn't, because you can use it for more things, but it reminds me of a solid mozarella / babybel and I'm not much keen on either.

I don't like babybel either but I love cold mozarella in a salad with basil and tomatoes mm
