I have a nice piece of pork tenderloin for tea but usually end up chopping it up into little pieces and making a stroganoff from it. Does anyone have any nice alternative recipes? Ideally I would like to roast it whole but need inspiration on how best to do it without overcooking the tenderloin.

Pork tenderloin needs to be cooked at a certain temperature. Not too hot, but you don't want to get sick either. You want it to be moist, not dry. Someone told me GE refrigerators have settings for pork. Is that true?
Don't cook it with SPAM... I do it wrapped in streaky bacon to keep it moist. You can also stuff it - apricots and wild rice work well.

How about a stroganoff, it's a little bit indulgent but if you use half fat creme fraiche then it's a little bit better for you.

Thanks for the ideas. Stroganoff is great but I think I'll defo give the stuffed and wrapped in bacon option a try (although I might use pancetta, is there any difference?!), sounds lovely. I got the Lorraine Pascal Cooking Made Easy for crimbo so might look there for inspiration also.

After the christmas inndulgence I had a steamed pork loin with steamed veg and a little apple sauce. It was simple and plain but tasted great after all of the fatty things I'd had
I find that I crave just plain, simple and healthy foods after the Christmas indulging.

Like then steamed approach how about making steamed dim sum or won ton?

You could maybe substitute this for creme fraiche? Although, I had this idea for a recipe recently and it would seem everyone else had also gone down the healthy January route as it had sold out!
(Why's it going off air I wonder? To be honest the presenters always seem a bit unprofessional to me, as it's like they're rehearsing. They fluff their lines, despite reading from an auto-queue and holding queue cards...)
