Nutty fried rice recipe
Healthy main meal rice dish
Nutty fried rice is delicious; it has a chewy texture. Peanuts are a very valuable source of protein for vegetarians, they also provide fibre.
Nutty fried rice per serving
Preparation and cooking time: 40 minutes
Nutty fried rice ingredients
1 medium onion diced finely
1 tbs of oil
2 cloves garlic, pressed
½ red pepper, sliced
½ yellow pepper, sliced
½ tin of sweetcorn
2 pints boiling vegetable stock
350g brown rice
60g salted peanuts
Freshly ground black pepper
- Cook the rice in the stock as stated on the cooking instructions.
- Heat the oil and fry the onion and garlic for two minutes on a medium heat.
- Add all the other ingredients (including the rice) to the onion and garlic and fry for five minutes on a medium heat.
- Season with the pepper. Serve.
