Healthy main meal casserole

Comfort food, but healthy! Low fat sausages make sausage casserole a good choice when you need a pick-me-up but without the calories. Serve with mashed potato.

30g carbohydrates
14g fat
19g protein

Preparation and cooking time: 40 minutes
Serves: 4

Sausage casserole ingredients

8 low fat sausages
1 tsp oil
1 onion, sliced
100g frozen peas
1 can kidney beans
1 500g jar passata
2 tbs wholegrain mustard
2 tbs tomato ketchup
Freshly ground black pepper

  1. Grill the sausages on high for 15 minutes, continuously turning until browned.
  2. Heat the oil and fry the onion until golden brown, add all the other ingredients and the sausages and simmer, covered for 40 minutes.
  3. Serve with mashed potato. Serve.
