I think I may have injured my hamstring. I can still run but not sprint fully and there is some pain when I stretch it. What is the best course of action to diagnose the problem and rehabilitate said leg?
Sorry to hear you've developed an issue with your hamstring and whilst you you can still run, before you do anything else, I'd suggest you book an appointment with a physio. They will be able to fully assess the problem and suggest the best course of rehabilitation.
This will likely be a schedule of stretches and leg strengthening exercises to perform. It's impossible to assess an injury without a detailed examination by a physio, which is why it’s key you see one as soon as you can.

I get really sore calves when running, especially up hills and it really affects my running. I do stretch them but is there anything else I can do to help them? (I walked on my toes for 13 years which I think is the main cause)
