Method

  1. Toss the meat in the flour. Heat the oil in a pan and fry the meat in batches.
  2. Remove the meat from the pan and fry the onion until golden brown.
  3. Add the meat, carrots, celery, apricots to the pan with the stock and rosemary.
  4. Bring to the boil, reduce the heat and simmer gently for 1hr 30 minutes until the meat is tender.
  5. Add pepper to taste and serve.
