I feel lethargic in the day if I have too many carbs. Can this have the same effect when running?
It is important you practice eating carbs before race day. I would suggest eating a large amount of pasta before one of your longer runs. You will then find out if they are OK for you or not. If you feel lethargic the day after eating runs then you may be eating too many and feeling bloated.
Ideally you would stock up on carbs before a big race. Maybe your portions are too large. I suggest you cut back and spread your carbs throughout the day (breakfast, snacks, lunch, snack, dinner). Remember carbohydrate drinks count as carbs so there are other ways to get them into your system.
